Fish and potato salad

Boil fish (tilapia or other white fish, cod or orange roughy) in a skillet with a small amount of water until done.

Use 1 large potato with 2 fish filets for 3 people.
Cut 2 or 3 holes in potato and wrap in wet paper towel. Cook in microwave until done.
Cook for 3 or 4 minutes on high and turn and cook 3 or 4 minutes on high... continue this until potato is soft.
Potato in paper towel in microwave.

Chop 1/2 of 1 large onion. Place in strainer and pour boiling water over it.


Chop 3 or 4 leaves of lettuce


After potato is done peel and chop into small pieces.


Put lettuce, onion, potato and fish in medium size bowl.
After fish is cool, put on top and chop the fish.


Add mayonaise and mix.

Add chopped lettuce and chopped onion.
Add a little fresh red pepper, dill and green onion as you wish.
Serve and eat.
This is also very tasty with cornbread and/or wine.
