I use Hungry Jack pancake mix but other pancake mix can be used.
(Flour may be used instead of pancake mix and if so use 1/3 teaspoon of baking soda and
1/2 teaspoon of lemon juice)
1 cup of pancake mix.
2 eggs
2 tablespoons of sour cream
3 tablespoons of vegetable oil
5 tablespoons of Splenda or sugar
3 red apples
1/4 teaspoon of salt
Whisk eggs with splenda
Add sour cream and mix
Add oil and mix
Add 1 cup of pancake mix
Peel and chop apples into small bite sized pieces.
I use aluminum foil to a pie pan and add a touch of vegetable oil to coat the pan.
Add the apples to the mix of eggs, pancake mix, sour cream and oil.
Pour the mix into the pie pan.
Bake in preheated oven at about 310 degrees for 30 to 40 minutes.
